This Sunday I have a super quick supper- this one comes together really really quick, it just takes a little bit of fore thought for the marinade. This one isn’t super pic heavy, because honestly it came together so quick and it is so straight forward that I didn’t feel the need to take many pics
Pork Souvlaki
1 pork tenderloin (approx. 1 1/2 lb) cut up into 1-2 inch cubes
2 tsp coconut oil (for frying)
Marinade
2 tbsp lemon juice
1 tbsp olive oil
1 clove of garlic, minced
1/2 tsp oregano
1/2 tsp salt and pepper
Tzatziki Sauce
1 cup cucumber, shredded
1/2 tsp salt
3/4 cup plain greek yogurt
2 cloves of garlic, minced
2 tbsp chopped fresh dill (or 1 tbsp dried dill)
1 tbsp lemon juice
To make the marinade throw all the ingredients into a large plastic bag with the pork. Mix & shake it around until the pork is full coated in all the marinade. Put it in your fridge and let it sit for 1-2 days.
Then drain the marinade and throw into a hot frying pan with the coconut oil (or your favourite cooking oil) and fry until it is cooked through and nice and browned on the outside. Alternatively you could do this more traditionally and skewer the meat on kabobs and roast them in the oven or BBQ.
To make the tzatziki put the salt on the cucumber and let it sit for a couple minutes- leaching the water out. Then drain the cucumber squeezing all the juice out, then add it to the yogurt with all the other ingredients mixing it all together.
Then serve it! I served this simply with some onions, peppers and broccoli fried in coconut oil with a little greek salad dressing. Super simple and super healthy!
The tzatziki is so refreshing and a perfect compliment to the meat! This is definitely something that you can have on hand in the fridge and whip up in 30 minutes on a busy night.
